Modern Bakery Moscow 2026

From March 24 to 27, Moscow hosted one of the main exhibitions of the baking and confectionery industry — Modern Bakery 2016. Petmol took an active part in the event, presenting a professional program and bringing together leading industry experts at the event venue. Elena Shramko, founder of the «Exclusive» Academy of Culinary Arts and also an ambassador of the Petmol brand, together with the leading confectioners of the «Exclusive Academy», Vladimir Zolotukhin and Evgeny Gritsepanov, held two master classes on desserts suitable for freezing and for delivery.

The topic was chosen for a reason: frozen desserts are becoming an increasingly relevant solution for the confectionery business. This technology allows you to optimize production processes, prepare desserts in advance, and preserve their quality, taste, and texture. Moreover, this format is especially convenient for delivery: the desserts tolerate transportation well and allow you to offer guests a wide range of options without having to prepare each item right before the order.

During the preparation of desserts, the head pastry chefs revealed the following nuances:

  • Which desserts are best suited for delivery;
  • How to properly assemble and package them.
  • How to plan the product range and priority items;
  • How to diversify a classic menu;
  • Freezing and thawing technologies.
