The special issue, which was released in April 2025, focuses on the rapid development of confectionery art in Russia. In this special issue, we share Elena Shramko’s recipe for the most delicate Pâtissier cream, whose perfect silky texture was achieved thanks to the use of Petmol 33% cream.
