Tiramisu

Method of preparation
  • In a separate bowl, carefully separate the egg yolks from the whites.
  • Beat part of the sugar with the egg yolks — they should turn into a thick, pale mixture. Then add the mascarpone cheese to this mixture and stir thoroughly.
  • Separately, beat the egg whites with the remaining sugar; be patient and beat them until they form stiff peaks. Fold the egg white mixture into the yolk and mascarpone mixture.
  • Brew the coffee, let it cool, and add the aromatic liqueur to the sweetened coffee — dip the cookies in the coffee.
  • Whip the cream with 100 grams of sugar (chill the cream in the refrigerator first, then pour it into a tall bowl and begin whipping with a mixer on medium speed). You can add cinnamon or a little vanilla to the cream. Whip it well!
  • Spread a thin layer of the whipped cream into the bottom of a cup. Now it’s time for the savoiardi: dip the cookies into the coffee mixture and quickly remove them so they’re just soaked but don’t lose their shape (about 3 seconds). Place the coffee-soaked cookies in the cup with the cream, then add a second layer of cream, and continue layer by layer — the final layer should be cream.
  • Top the dessert with whipped cream (you can pipe small dots along the base of the dome using a pastry bag, or place the cream in a regular plastic bag, fold the bag into a triangle, and cut off the bottom corner to create a makeshift pastry bag). Sprinkle with cocoa powder or grated chocolate and refrigerate for half an hour to set.
