Chocolate Mousse Cake with Marshmallows


For the tartlet
Oreo cookies

Butter
45 g
Flour
50 g
Cocoa powder
20 g
For the mousse
Method of preparation
- Tartlet: mix all ingredients in a mixer, transfer to a pan, smooth the surface, and bake for 7 minutes at 180 °C.
- Mousse: combine both types of chocolate, then melt it in a double boiler.
- Whisk the egg yolks and simultaneously cook the sugar syrup until thick; then add the syrup to the egg yolks and whisk until completely cooled.
- Add half of the cream to the melted chocolate and mix with a whisk, then add the cooked egg yolks and the remaining cream.
- Place the tartlet in a pastry ring and top it with chocolate mousse. Garnish with marshmallows.
