Basque caramel cheesecake

Method of preparation
  • Prepare a 22 cm baking pan (lined with parchment paper).
  • Preheat the oven to 230 °C.
  • Mix the cream cheese, cornstarch, and orange zest.
  • Make caramel from sugar and water.
  • Heat the cream with butter.
  • Add the passion fruit puree.
  • Add the passion fruit puree.
  • Cool to 60 °C.
  • Add the eggs to the cheese mixture.
  • Add the caramel.
  • Bake for 24–26 minutes.
  • Chill for 8 hours.
