For the meringue

Zest and juice of one lime

For the cream and garnish
Method of preparation
- Beat the egg whites with a pinch of salt until light and foamy. Gradually add the sugar and continue beating until stiff peaks form.
- Using a spatula, gently fold in the sifted powdered sugar, lime zest, and lime juice.
- Pipe the mixture into a nest shape on a baking sheet and bake in an oven preheated to 150 °C for 25–30 minutes.
- Whip the cream, previously chilled to 2–6 °C, with powdered sugar until thick. Fill the indentation in the meringue with the resulting cream. Garnish with berries.
