Leeks (white part)

Clarified butter

White wine

Chicken broth

Thyme

Method of preparation
  • Sauté the leeks in butter with thyme and garlic.
  • Add the wine and let the alcohol evaporate.
  • Add the potatoes and broth, and cook until tender.
  • Pour in the cream and blend until smooth.
